Sip Bar & Lounge is thrilled to have award-winning Executive Chef Janine Falvo at the helm of its kitchen. Top Chef contestant Falvo heads up the culinary team and embodies an “ocean to fork” philosophy. Taking advantage of the Pacific Ocean just a few blocks away, Falvo celebrates the best of locally caught seafood as a highlight of the menu. Choices also include the finest organic meats, artisanal cheeses and produce.

Before joining Sip Bar & Lounge, Falvo was the Executive Chef at Briza and Rooftop 866 at the Renaissance Atlanta, where she fostered a farm-to-table approach to locally inspired cuisine using seasonal ingredients. She has received numerous awards and recognition during her illustrious culinary career.

David Maclennan

As executive chef at James Republic, David MacLennan takes his culinary craft to new heights using the freshest of ingredients. “Our style at James Republic is what we like to call ‘modern California coastal,’ said MacLennan. “I scour the farmer’s markets and meet with our local purveyors daily to ensure we are creating dishes showcasing the season’s finest flavors.” While pursuing an engineering degree at University of Florida, MacLennan’s love for cooking and part-time jobs in the restaurant industry led him in an exciting new direction, later graduating from Johnson and Wales University in culinary arts in 2004. It was at this time that he met DJM President, Chef Dean James Max.

Becoming part of Max`s team, MacLennan joined the Columbus Renaissance Hotel`s Latitude 41 team as restaurant chef under the direction of Chef Tony Miller. He credits Max and Miller as having a profound influence on his professional development as a chef. After taking over as executive chef of Latitude 41, MacLennan’s career took him to Columbus’ Basi Italia where he embraced his Italian roots and honed his skills. In 2013, MacLennan was approached by Max to open a new farm-to-table restaurant in Long Beach - James Republic - and today it’s one of the most happening restaurants in a rapidly growing area of South Los Angeles County.

VICTOR JUAREZ

FUEGO AT HOTEL MAYA

Award-winning Executive Chef Victor Juarez is leading Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge at Hotel Maya, with a unique menu that blends his El Salvadorian roots with his Southern California culinary sensibilities. Fuego’s unique setting at the water’s edge provides service to 146 guests with 80 on the patio area and features stunning open-air views that include the Pacific Ocean, Long Beach skyline and the Queen Mary.

Chef Juarez also oversees all food preparation and execution for the resort’s 20,000-square-feet meeting, special event, and wedding venues. In addition, he directs and implements the 199-room hotel’s room service, banquets and catering activities.

Prior to joining Hotel Maya in 2010, Chef Juarez spent a year as executive chef at Morongo Casino Resort & Spa in Cabazon, Calif., leading all culinary efforts for the property’s nine restaurants and lounges.

Previously Chef Juarez was executive chef at the historic Mission Inn in Riverside, Calif., overseeing all facets of the resort’s food operations including four dining outlets, hotel room service and banquet facilities. He began at the Mission Inn in 1993 as executive sous chef.

While at the Mission Inn, Chef Juarez was the recipient of several culinary honors including a “Four Diamond” award for culinary excellence by AAA. He also received the “Golden Scepter” award in the American category, “Best of Award of Excellence” for wine, and a “Gold” award by the Southern California Restaurant Writer’s Association.

As executive chef at the Mission Inn, Chef Juarez joined three other elite chefs in an exclusive opportunity to participate in a dinner event at the James Beard Foundation in New York.

He continues to hone his culinary skills through seminars at the Culinary Institute of America in Napa Valley, Calif., and New York. Chef Juarez travels frequently throughout Mexico to learn the different regional cooking trends and classics.

Chef Juarez resides in the Long Beach, Calif., area with his family.
